Parmigiano Reggiano, The Land
Parmigiano Reggiano in their advert and on their website focus on the ‘biological diversity’ of the local area, citing the ‘intense bacterial activity of the autochthonous microbial flora, and …environmental factors, especially by the local forage, grass and hay’ as the key to the product.
This emphasis suggests the cows are grazing, despite the fact CIWF Italia’s investigation found that the cows from some of the dairy farms that supply dairy to Parmigiano Reggiano don’t have access to pasture and are kept permanently in barns.
The projection of grazing cows and rural idyll misleads consumers by masking the heavily industrialised and intensive dairy farming reality and the high emissions associated with that scale of production.
